It’s hot. As I’m typing this, we’re on day 6 of the daily maximum temperature being 100 degrees or higher. Not only does the heat crank up our A/C, it also lowers my desire to cook actual dinners. I don’t want to stand in front of the stove at 4pm. I want to be in the pool with the kiddos, sipping a diet coke, pretending someone else is going to make an actual dinner.
Alas, I am the mama of the home, and thus, I am the one making the dinner. Here’s what I’ve been feeding my crew in this heat:
-sandwiches of all sorts: chopped (look up chopped italian, ceasar, or club recipes), or regular deli-style, PB&Js also acceptable!
-frozen pizza: throw that bad boy in the oven & hop back in the pool
-make-ahead casserole: I’ll throw together something in the morning to put in the oven in the afternoon, some favorites around here are tortilla chip enchiladas and
-crockpot meats thrown on a bun: think BBQ chicken, pulled pork, or sloppy joes
-crockpot tacos: same concept as above, just season the meat differently & put it in a taco shell or on a tortilla
-snack boards: bring out the pretzels, hummus, cheese, and some meat & let everyone grab what they want, bonus for this one is no dishes
-hamburgers, ribs, or steaks – I hesitate to put this on here since it means Hubby has to stand in front of a hot grill, but we have been eating these so it makes the list
Alone, these aren’t really full meals, but I like to keep tortilla chips, potato chips, fruit trays, and veggie platters on hand to round out meals. It’s simple, but it keeps me outta the kitchen and everyone fed!
Disclaimer/Reality Check: No judgement if you’re the kind of mom that cooks full meals year-round. You do you, boo, I just prefer spending my time doing cannonballs in the backyard. This column will be about motherhood, parenting, and homemaking for the most part. It could be a short & sweet poem or a long tirade on inappropriate movies at movies in the park events. Most importantly, I don’t ever want this column to make another mama think she’s not doing enough. If you’re reading this, I want you to know that you are, you’re doing great, keep it up.
