Sol Mio celebrated its ribbon cutting Thursday, Sept. 17, with The Pahrump Business Council, marking a new chapter for a restaurant that has long been part of one family’s life.
Owner Leslie Ramirez told Pahrump Business Council representative Nina Castellanos that the restaurant was formerly Tacos Fiesta. When Ramirez’s father decided to retire and move, he gave her the opportunity to take over the space and make it her own. She created Sol Mio, refreshed the menu and kept many of the Tacos Fiesta favorites customers had come to know.
Ramirez also gave breakfast a larger place on the menu for a straightforward reason: she loves it. Breakfast burritos are among her personal favorites, and the restaurant’s fresas con crema pancakes have become a bestseller. She said she wanted Sol Mio to have a cute, welcoming feel, with food presentation that reflects her vision for the restaurant.
Taking ownership has changed how Ramirez experiences the business, too. She said that at Tacos Fiesta, she often worked behind the scenes. Opening Sol Mio encouraged her to spend more time getting to know customers and connecting with the Pahrump community.
Those relationships have become one of the most meaningful parts of the past few months, Ramirez said. She expressed gratitude for the people who have supported her, including customers she met only recently, and for the connections she has made with other community members.
Castellanos congratulated Ramirez during the ribbon cutting and offered the Pahrump Business Council’s support as Sol Mio continues to grow.
Sol Mio is located at 1330 Fifth St. in Pahrump. It is open Thursday through Tuesday from 8 a.m. to 4 p.m. and closed Wednesdays.
